Holiday Cookie Recipe Exchange!

Happy Holidays to all of you! I love to bake during the holidays. It is a tradition in my family, I have great memories from when I was growing up. We had a schedule on the bulletin board so everyone knew what their jobs where for the baking process. We boxed them and passed them out to friends and family. I still do that with my daughter and I love to give out cookies to our friends. I am hoping you might share some recipes on your blogs so we can all try each others treats. I am going to start with cut-out sugar cookies. They do take a little extra work and time, but it is so worth it and these are delicious.

Sugar Cookies:
1 cup softened butter
1 1/2 cups powdered sugar
1 egg
1 tsp vanilla
1/2 tsp almond extract
2 1/2 cups flour
1 tsp cream of tartar
1 tsp. baking soda

Mix together and form dough into a ball. Cover tightly and refrigerate for 2 or 3 hours to get it firm. I use a combination of powdered sugar and flour to roll them out in. I take a handful of dough and roll out and use my favorite cookie cutters. Keep the dough covered when you are rolling out the cookies. Don't let it dry out.
Place them on a cookie sheet and use colored sugar or sprinkles to decorate them.

Bake for 8-10 minutes until the bottoms are lightly browned

I love these cookies, they are so pretty in a gift box and they are so good and melt in your mouth. Sometimes(when I am patient enough) I leave them plain for baking and frost and decorate them. I use a sugar substitute as my husband is diabetic and they taste just as good.

I am not much for the rules, but I will tell you 7 things about me.

1. I am a certified Medical Assistant, but have not worked in that field for a few years.

2. I love movies, horror, mystery and suspense are my favorites.

3. My favorite Disney movie of all time is Beauty and the Beast, I love stories about inner beauty.

4. Like Beth I am also a big fan of Finding Nemo, my daughter and I have watched that movie so many times I am not even sure how many, she is 24 and we love it. Dory is my favorite, I have her hanging on my rear view mirror in my car.

5. I am a baseball fan, Detroit Tigers are my boys.

6. I love to cook and bake and am almost daily entering contests. So far, no luck, but I don't give up.

7. I am a homebody. I would rather be home with my family then any place else.

I have always loved this meme and this is the first time I finally got something together that I hope fits in with it. On a recent visit to an apple orchard I found some wonderful things in the barn with the cider and donuts. We devoured the donuts and then took some pictures

The first one is retro in that, it has been many many years since my butt could fit in one of these school desks.
All kinds of old tools on the walls, because I am somewhat clumsy, that is as close as I want to get to those saws.
I wonder if this became obsolete when gas prices went up.

This old stove really intrigued me. I love to cook and bake and just imagining what must have come out of those doors. Homemade breads, cakes, cookies, raccoons. I especially loved the setting on the stove. Set it and good luck lol.

The weather in Michigan has been beautiful this past weekend. My family and I took a ride to a local orchard for some fresh apples, cider and of course warm homemade donuts.

We chose the apples already picked, but if you were interested you could pick your own. They had a nice variety. We took home some red delicious and macintosh.

I thought this was too much fun. I wasn't about to climb up there with my bad back, but there were lots of little ones getting pictures taken on it.

There was a nice little area with goats to feed and pet.

Large-scale livestock and poultry producers have become overly reliant on antibiotics. By keeping animals on these drugs all the time, factory farms can become ever more overcrowded and unsanitary while circumventing the disease outbreaks that these poor conditions ordinarily would produce. Therefore, curbing the use of antibiotics may prove to be an incentive to raise animals using more humane and sustainable methods.

Happy Halloween to all of you!! We love Halloween in our house. I think because we all love Fall so much. I am following the Brenda Photo Challenge and this weeks theme is "Halloween". http://brendaphotochallenge.blogspot.com/2009/10/next-challenge-and-theme-10-31-09.html

I like to bake cookies for the neighbors and for the adults to enjoy while the kids are trick or treating. We get between 100-200 kids every year. It is a fun night, I hope the weather holds up this year. It has been raining and cold the past few days. My husband bought me a wonderful present just for fun. It is a baking pan that has dividers for brownies or bars. When you are done baking and it has cooled slightly, you just lift out the divider and you have 18 perfectly cut pieces of whatever you baked. I have seen it on TV and mentioned it, so he surprised me with it.

I have used it for brownies and bars and it works wonderfully for both. It didn't do so well with a regular cake mix, it came up too much and baked over the divider and was hard to get out. I was just experimenting with it. The bars I have here are apricot bars and the recipe follows. You can use a regular 13x9 pan, I just wanted to show you my new pan.

Apricot Bars

1 and1/2 cups flour

1 tsp. baking powder

1/4 tsp salt

1 and 1/2 cups quick cooking oats

1 and 1/4 cups packed brown sugar

3/4 cup butter(1 and 1/2 sticks)
1 and 1/2 cups apricot jam(or any flavor you like)

Preheat oven to 350

Grease a 9x13 inch pan

In a large bowl mix flour, baking powder, salt, oats and brown sugar. Cut in butter until very crumbly.

Pat 2/3 crumb mixture into the bottom of the prepared pan and then spread the jam over that. Sprinkle remaining crumbs on top. Bake for 35 minutes and cool before enjoying.

1.Mac ‘n’ cheeseThe blue box of Kraft macaroni and cheese is a classic kid’s meal, but it doesn’t rank high with most nutritionists.
A one-cup serving has 380 calories, 14.3 grams fat (4 grams saturated) and a whopping 749 milligrams of sodium.
Sneaky swap: Use healthier out-of-the-box brands like Annie’s Macaroni & Cheese, which has 280 calories, 4 grams fat (2 grams saturated) and 430 milligrams sodium. It’s made with natural ingredients and organic wheat pasta.
Even better, dress it up. Swap in whole-grain pasta and throw a few veggies into the sauce, Schmidt says.
Use veggies that blend in, such as shredded steamed carrots and diced cauliflower. If your kid won’t freak out at the sight of green, add nutrient-rich steamed broccoli, spinach, kale or peas.

Sneaky swap: Shelton’s Organic Prairie, Lightlife, Applewood Farms, Healthy Choice and Diestel Turkey.
Compare a single, bunless Oscar Meyer wiener, with 147 calories and 13.6 grams of fat (5.6 grams saturated), to Organic Prairie uncured chicken dog, which has 70 calories and 4.5 grams fat (1 gram saturated) and no nitrates or nitrites.
Serve it on a whole-wheat bun with a side of veggie sticks and lunch is done

3.Grilled CheeseHot off the grill, dripping with butter and oozing with melted American cheese, this sandwich is a crowd pleaser with everyone. It’s also a calorie and fat bomb.
One grilled cheese can easily weigh in at 500+ calories, with more than half of those from fat. So how can you lighten its dietary load?
Sneaky swap: “Use naturally low-fat, low-sodium cheeses such as mozzarella,” Schmidt says.
Grill it up panini-style with mozzarella, fresh tomato and basil and a drizzle of olive oil. It’ll be the newest household hit.

. Peanut Butter & JellyGrape jelly on white bread with a blob of peanut butter is a typical kid’s go-to lunch. Unfortunately, it doesn’t give them many nutrients, particularly the fast-food variety. One Panera kid’s PB&J has more than 400 calories, 17 grams of fat and 22 grams of sugar.Sneaky swap: Use whole-grain bread, no-sugar-added jam and all-natural peanut or almond butter. Throw in sliced bananas for extra potassium and vitamin B6, then watch your kids gobble it up.

5. Chicken NuggetsWhere do you begin with this nutritional nightmare? For starters, nuggets are a highly processed industrial assortment of chicken parts, additives, preservatives and chemical flavorings.
The original chicken McNugget contains 38 ingredients ranging from tertiary butylhydroquinone (TBHQ), dimethylpolysiloxene and other tongue twisters to partially hydrogenated corn oil (aka trans fat).
If a food doesn’t sound real, chances are it isn’t. Serve real chicken instead.
Sneaky swap: At the drive-thru, order chicken strips. Yeah, they’re breaded, fried and high in calories and preservatives, but chicken is still the main ingredient.

6.French FriesNo nutritional good comes from the French fry. Why? “Fried foods add unnecessary saturated fat and salt to kids’ diets,” Schmidt says.
But you don’t have to give up the potato. Sneaky swap: Baked sweet potato fries. They’re higher in vitamins A, B complex and C, and potassium - and a snap to make. “Slice sweet potatoes into sticks, toss in a little olive oil and roast on a baking sheet at 400°’F for 5-10 minutes on each side.” No time? For a quick, store-bought alternative, buy frozen baking fries. “Alexia Organic makes a delicious potato or sweet potato fry for baking,” Schmidt says.

7.PizzaSurprise! Pizza can be a healthy meal.
Just not with pepperoni or sausage. One slice of Pizza Hut’s Pepperoni Lover’s pizza has 330 calories, 18 grams of fat (7 grams saturated) and 800 milligrams sodium.Ditch the takeout. Let kids make pizza from scratch, Schmidt says. Frozen whole-wheat dough, low-sodium sauce and mozzarella provide a good base for piling on thin-sliced peppers, carrots, broccoli, zucchini, artichoke hearts and more. The possibilities are endless.

8.JuiceJuice sounds healthy, but most fall short of nutritional gold.
The problem? Even 100% fruit juices are not as filling as the actual fruit, says William H. Dietz, M.D., director of the Division of Nutrition, Physical Activity and Obesity at the CDC.
“If you serve the juice equivalent of a piece of fruit, the brain doesn’t do a good job of registering these calories,” he says. That’s because an orange has bulk and is more filling.
Still, juice doesn’t have to be off limits, especially in warm weather where drinking plenty of liquids is important. But serve no more than 4 ounces a day for children under 6; 8 if they’re older, Schmidt says.
Also, give them 100% juices and dilute them with one-third to one-half water. And break out of the clear-fruit juice box every now and then. Sneaky swap: “Apple and white grape juices are relatively low in nutrients and high in sugar compared to other juice varieties,” Schmidt says.
A good alternative is V8 V-Fusions, a fruit-vegetable blend that offers natural fruit sweetness with veggies — “a lifesaver if your kid refuses to touch the real stuff,” Schmidt says.
But “they shouldn’t be a long-term substitute. Juice – even fresh-squeezed – is a concentrated source of sugar,” she says.

That’s because disease-carrying bacteria and viruses live practically everywhere — shopping malls, grocery stores, playgrounds, petting zoos, restaurants. They can survive up to two hours on shopping carts, escalator handrails, even doorknobs before they find their next victim. "

More bounty from the local farmers market

I have been visiting our local Farmers Market quite a bit lately. I love the fall harvest. The colors are so beautiful. I usually go with my husband and sometimes my daughter. My daughter and I have sort of a contest every year to pick the gourd with the most bumps and is well ,ugly lol.

When we got home we start cooking, homemade soup and fresh tomato sauce are among the treats we make.

It always turns out to be such a nice family day. I love to cook and I can't think of any place I would rather be than in the kitchen with my daughter cooking something delicious.

Look at those portabella mushrooms and the color in the eggplant. I love fall.

Fall=Pie Baking Time!!

Last Sunday was a beautiful fall day here in Michigan. My daughter and I decided to spend the afternoon baking pie. We started with a tart cherry pie. My daughter thought it would be fun to paint on the crust with food coloring. I think it turned out really nice. It was delicious. The recipe follows at the end of the pictures. Next we decided on a fresh peach pie. I was at the farmers market to get ready for Judy's Farmers Market Challenge http://squirrelqueen2.blogspot.com/2009/09/september-farmers-market-challenge.html#comments this weekend and I picked up some fresh peaches there. We made a fresh raspberry sauce to go on it. My daughter did the crust and again I think she made it look pretty.

Cherry Pie:

2 (16-ounce) cans tart cherries

1 cup sugar, divided use

3 tablespoons cornstarch

1/4 teaspoon salt

1 tablespoon butter or margarine

1 1/2 teaspoons lemon juice

1/4 teaspoon almond extract

1 tablespoon milk

1 tablespoon granulated sugar

Pie crust for double

Line a pie plate with 1/2 crust rolled out or use already made pie crust.

Preheat oven to 425°F.
Drain cherries, reserving 3/4 cup of liquid; set cherries aside.
In a saucepan combine reserved cherry juice, 1/4 cup sugar, cornstarch and salt. Cook over low heat until thickened, stirring constantly. Add remaining 3/4 cup sugar and cook until glossy.
Remove from heat and stir in butter, lemon juice and almond extract. Gently fold in cherries; allow to cool.
Spoon mixture into unbaked pie crust. Cut remaining pie crust into strips and form a lattice on top of pie. Seal and flute edges; cover edges with aluminum foil. Brush lattice top with milk and sprinkle with sugar. You can also just leave a full top as above and decorate it.
Bake 15 minutes, reduce temperature to 350°F. Remove aluminum foil and bake 25 minutes or until golden brown and cherries are nice and bubbly. Cool completely on a wire rack. Enjoy with ice cream or just by itself.

Peach Pie:

7 cups peaches, peeled, cored and sliced( I mixed white peaches and nectarines with regular peaches for variety)

1/2 cup firmly packed brown sugar

4 tablespoons all-purpose flour

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon butter

1 large egg, beaten
Crust for a double pie

Line pie plate with 1/2 rolled out crust.

Mix peaches, brown sugar, flour, lemon juice, cinnamon and salt together until well combined. Pour into pie shell and dot with butter.
Make a lattice top or full crust whichever you prefer. Brush with beaten egg and if you use the full crust be sure to make some slits in center for venting.
Bake 45 to 55 minutes, until crust is golden and bubbly. Remove from oven and cool on a wire rack before.
Enjoy.

Another football weekend is almost upon us. Wisconsin won last week and for the harmony in our household, I hope they win again. I have a recipe that is slightly similar to last weeks "Jalapeno Popper Dip". Another variation that is easy to prepare and does work for a tailgate party or just a football party at home.

Jalapeno Popper Twice Baked Potatoes.

Serves 4

2 baking potatoes

8 oz. cream cheese

1/2 cup mayonnaise

1 cup cheddar cheese, divided use

1/4 cup chopped pickled jalapeno peppers

1 fresh jalapeno chopped up(optional)

1 TBSP olive oil

1/2 cup sour cream

1/4 cup milk

Bake the potatoes in the microwave according to your settings. With oven mitts on, cut them in half the long way. Let them cool. When cooled enough to handle, scoop out potato, leaving skin intact. Do this carefully as you will need the skin to put the potato back in to. Take the olive oil and brush the outside of the potato skins, this will help them crisp up a little while baking. Mix together cream cheese, mayo, cheddar cheese, pickled jalapenos. Divide this mixture and scoop into the potato skin halves. Take the potato you scooped out and mix with milk and sour cream, mash it until it is nice a smooth. Spread this potato mixture over the cream cheese mixture in the skin, making sure to completely cover the cream cheese mixture. Sprinkle remaining cheddar cheese over and add fresh jalapeno peppers. These can be put in a foil dish and reheated right on the grill or in a 350 oven for about 20 minutes until the cheese is melted and they are nice and bubbly. I love to make these and surprise my guests with the creamy center of the potato. I hope you have enjoy them.

There always seems to be a time when I want to make something and what I need is not in the house. I have had 2 other posts with common substitutions, I want to do another one with spices and herbs. I hope it helps you sometime when you don't feel like going out to the store.

Spices:

Aniseed~~~Fennel seed or a few drops anise extract
Cardamom~~~Ginger
Chili Powder~~~dash bottled hot pepper sauce plus a combination of oregano and cumin

Cinnamon~~~Nutmeg or allspice(use only 1/4 of the amount)
Cloves~~~Allspice, cinnamon or nutmeg
Cumin~~~chili powder
Ginger~~~allspice, cinnamon, mace or nutmeg
Nutmeg~~~cinnamon, ginger or mace
Saffron~~~dash turmeric(for color)

Herbs:

Basil~~~Oregano or Thyme

Chervil~~~Tarragon or Parsley

Chive~~~green onion, onion or leek

Cilantro~~~Parsley

Marjoram~~~Basil, Thyme or Savory

Oregano~~~Thyme or Basil

Rosemary~~~Thyme, Taragon or Savory

Tarragon~~~Chervil, dash fennilseed or dash aniseseed

Thyme~~~Basil, Oregano, Marjoram or Savory

Happy Labor Day to all of you. I hope you all have a great weekend. The college football season is here. My husband is a sports fanatic, but college football is his absolute favorite. We used to have a cartoon on the refrigerator that said"Kiss Daddy goodbye, college football season is starting". I love it also, we used to have some great tailgate parties back in Wisconsin and still do here in Michigan. I am going to share new recipes each week. I hope you like them and join me if you want and we can have a big blogger tailgate party!

Jalapeno Popper Dip

1-8 oz. cream cheese softened
1/2 cup mayonnaise
1 cup grated cheddar cheese(divided use)
1/4 cup chopped( bottled )jalapeno peppers
1 fresh jalapeno pepper chopped
1/2 cup panko bread crumbs

Mix together cream cheese, mayonnaise, 1/2 cup cheddar cheese, 1/4 cup bottled chopped jalapeno peppers well. Spread into a foil pan or any dish that could be put on a grill. Put the rest of the cheddar cheese over the top and then the fresh jalapeno peppers and last spread the panko bread crumbs over it. Heat it in the oven at 350 for about 30 minutes, until it gets nice and bubbly looking. I then wrap foil around it to keep it warm and take it to the tailgate party. It stays warm for quite a while if you wrap it tightly. If it needs to be reheated just put it on the grill. Serve with crackers or spread it on bread. It is delicious. If you don't like it so spicy, try omitting the fresh jalapenos on the top.

Grilled Potatoes Greek Style

This is a great recipe to go with the Pork Souvlaki recipe I recently posted. I know that there are many versions of grilled potato packets for the grill. My daughter and I love greek food and love feta cheese. If you do also, please give this a try.

Serves 4
~~~~~~~~~~~~~~~~~~~
8 or 10 small red skinned potatoes, washed and cut into thick slices, leaving the skin on
1 small onion, sliced thin
3 TBSP olive oil
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried oregano
1 cup crumbled feta cheese

Mix together all the ingredients and set aside. Take a large piece of foil and put the mixture right down the middle. Carefully seal all sides and then I take another sheet of foil and wrap it again, so that nothing leaks out to flare up the grill. You can place the packet on the grates or right into a campfire or charcoal grill. It takes about 30-45 minutes, you can, with an oven mitt on, pinch the potato and tell if it is soft. Be sure to turn the packet over about every 10 minutes while its cooking so that it cooks evenly. It is very hot and steamed when you open it, be careful.

True Colours Thursday

Grilled Pork Souvlaki

My kitchen is torn up right now and it is a mess. Everything is in boxes as we are getting some needed repairs done. I am so excited for a new kitchen and will be so glad when it is all done. We have been eating out a lot. It is really hot here, but I wanted to try grilling despite the heat. I don't have any photos, sorry, my camera is somewhere in the mess and my daughter is away this weekend with hers(the above photo I found on the web, cheating, sorry). I hope you enjoy the recipe.

Grilled Pork Souvlaki

1/4 cup olive oil
3 tablespoons lemon juice
1 large clove garlic, minced

1/2 teaspoon salt
1 teaspoon dried whole oregano
1/8 teaspoon black pepper
1 pound pork tenderloin or pork loin chops, cut in 2” cubes for grilling
1 large green pepper, cut into 2” cubes( I like to use the yellow ones also)
1 medium onion, cut into 2” cubes

Combine, oil, lemon juice, garlic, oregano, pepper, salt together in a zip lock bag. Put the pork in the bag and seal, give it a shake and refrigerate for an hour. Using skewers, alternate peppers, onion and pork leaving room at each end of the skewer so the food doesn't slip off into the grill.

Grill for 10-15 minutes on medium heat, turning often and using the marinade in the bag brush them often while cooking.

This is easy and delicious, served with a nice fresh salad and fruit.

5. I have 4 ear piercings(2 on each ear) and I did them all myself, when I was young and silly, but they are still there.

I have been going through some church cookbooks again. These cookbooks are treasures, full of not only great recipes, but useful information. I thought I would pass a few onto you. I hope you like them and find them helpful.

1. Use styrofoam egg cartons as trays, when you need extra ice for parties.
2. Store a carton of cottage cheese upside down, it will keep twice as long.
3. Place bay leaves in a tea ball, to add to soups or stews, you don't have to worry about finding it to remove later on.
4. For an instant white sauce:blend together 1 cup butter and 1 cup flour. Spread into an ice cube tray and chill it well. Pop them out and store in a zip lock bag in the refrig or freezer. For medium thick sauce, drop 1 cube into 1 cup milk and heat slowly, stir as it thickens.
5. Out of ginger ale? Mix equal parts of Coke and 7-up.
6. For fluffier omelets, add a pinch of cornstarch before beating.
7.Popcorn should always be stored in the freezer. It will stay fresh and freezing eliminates "old maids".
8. When a drain is clogged with grease, pour a cup of salt and a cup of baking soda into the drain followed by a kettle of boiling water. The grease should dissolve and open the drain.
9. Shaving cream is a useful upholstery cleaner.
10. Club soda cleans and polishes kitchen appliances.

These are my favorites for today. I have tried most, but #2, I just found that one amusing, I have no idea why that would be. I have not tried #9 but #10 does surprisingly work
I do use #4 the white sauce trick, it really does work.

Recipes for Salad Dressing and Some Awards!!

I love salad and especially this time of year with the fresh tomatoes and fresh vegetables in general. I am very picky about dressing, so I make my own. These recipes are not light or diet. I tend to be very light on how much I put on. My husband and daughter use the dip the fork in the dressing method and then take some salad and eat. For this reason I do not worry too much about the calories, because this one area where we don't overdue it. I hope you enjoy these, they are my favorites.

Creamy French Dressing

1/4 cup sugar
1 tsp. kosher or any coarse salt
1 cup vegetable oil
1 TBSP Worcestershire sauce
1/2 tsp. onion powder
1 clove garlic, crushed
1 tsp. paprika
1/3 cup white distilled vinegar
2 TBSP fresh lemon juice
1/2 cup tomato ketchup

Mix all ingredients in a blender for a minute or so. Store in another container in refrigerator. I always put a date on it so I don't forget how long ago I made it. It makes about 2-3 cups. I have stored it for a few months with no problem.

Apple Vinaigrette

1/4 cup cider vinegar
1/4 cup olive oil
1/4 cup apple juice
1 tsp. honey
1 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. dry mustard
1/2 tsp dry basil
1/4 cup chopped fresh parsley

Mix all ingredients in a blender for a minute or so. Store in another container in the refrigerator. Of course you will have to give it a good shake before you use it. I like this as an alternative to a raspberry vinaigrette. I make a salad with greens, fresh tomatoes, chopped fresh apples and walnuts. We like it, I hope you do also.

This is my layered taco salad, but I do use the French dressing on this mixed with some salsa, it works very well.

Sunburst Stir -Fry

1 20 oz. can chunk pineapple, drained(save the juice)

4 small boneless chicken breast, sliced into thin strips

3 carrots sliced

1 green pepper sliced

3 green onions, sliced

2 cloves garlic, minced

1 tsp. ground ginger

3 TBSP oil(divided)

4 oz thin spaghetti, cooked

1 TBSP corn starch

Sauce:

Mix together pineapple juice, 1 TBSP oil, 1 TBSP corn starch and set aside

Stir fry the chicken in 2 TBSP hot oil, ginger and garlic. Cook for 3 minutes. Add pineapple, carrots, green pepper and onions. Cover and steam for 3 minutes. Stir in spaghetti and sauce, turn up to high and stir constantly until the sauce thickens. Serve hot and enjoy.

Quick and yummy. I like to prepare the meat and vegetable the night before and then it is so simple to just throw it all together.

What is your favorite summer fruit??

For me there is nothing like watermelon, we get them whole and it doesn't take long for us to finish it. Well the seedless kind, the smaller ones. Sweet, delicious, juice running down your arm. That's all I need.

Substitutions in your recipes.

I was going to make a treat for a friend who had an accident and went to my pantry and didn't have some of what I needed. I was home without a car and my neighbor who I borrow from was on vacation. I did find some substitutions and thought it would be fun to pass some on to you.

1 cup sugar~~~~~~1-1/3 cup brown sugar or 1-1/2 cups powdered sugar
1 cup honey~~~~~~1-1/4 cup sugar and 1/4 cup liquid
1 cup brown sugar~~~~~~ 1 cup granulated sugar and 2TBSP molasses
1 cup powdered sugar~~~~~~1 cup sugar and 1TBSP corn starch, mix in blender
1 cup corn syrup~~~~~~1 cup sugar and 1/4 cup liquid
1 sq unsweetened chocolate~~~~~~3 TBSP cocoa and 3 TBSP shortening
1 oz bitter chocolate~~~~~~4 TBSP cocoa plus 2TBSP butter
6 oz package semi-sweet chocolate melted~~~~~~2 squares unsweetened chocolate plus 2TBSP shortening and 1/2 cup sugar
1 cup buttermilk~~~~~~1TBSP vinegar or lemon juice plus enough milk to make 1 cup. Let stand 5 minutes or use yogurt.

These are things I run out of and often have the substitution in my pantry somewhere. I found these in a cookbook from my church. I hope it helps you sometime when you run out.

1. Do you have a tattoo...?? if so What and where is it??if not do you have a secret desire to have one? No I do not, but as crazy as this is , my daughter (23) just got a tatoo, this last weekend. She designed it herself. I don't care because I hate tatoos!! I won't even show it to you.

2. You have been offered a free botox treatment...where do you have them put it?

No place, no time, no way!! I don't want to( hopefully) get up to heaven and have God say, "who are you", "that isn't the way I sent you down there".

3. Do you have a good luck charm? what is it? I really don't I am not very superstitious.

4. When was the last time that you said something to someone that you REALLY wished you hadn't said? I told my daughter I hated her tatoo. I love her and don't like to hurt her feelings, but I really hate tatoos.

5. The bath water is running, the phone is ringing, the dog is barking and there is someone at the door.....what do you do? No problem, give Sasha a treat and get in the tub for a nice soak. Whoever is at the door and phone can wait. If it is urgent, they will call and come back.We get a lot of solicitors in this area so I don't always answer my door anyway. If its the police, they will come in anyway, right?

6. Your best friend from high school just popped in from out of town. do you offer them a place to stay or suggest a hotel? I would offer her a place to stay after I sent her out to get pizza so I could spend an hour doing some frantic cleaning.

7. Have you ever seen a ghost? How can you see a ghost?? I don't think I have seen one, but I am positive my parents house is and always was haunted. I do believe in ghosts. There has been a very cool story about a hotel in Milwaukee(where I am from) called The Pfister, that is haunted.

8. Someone is driving in front of you rather erratically and slowing you way down...now you see that they are talking on a cell phone and checking themselves out in the mirror. The other lane is blocked off so you can not go around them. What do you do?? I would honk and honk and honk, unless they looked like the type that might have a gun, in that case I would go slowly behind them, minding my own business.

Topic for Saturday, July 11, 2009:

6 things you think would be great about being a rock star (or just famous in general)

1. Lots of money. I know that is greedy, but I would just like to know what its like. I would do good charitable things with it, honest.

2. World travel, I haven't been lucky enough to see a lot of the world yet, I am sure as a rock star I would get to see it all.

3. I might get to be a guest at the White House. I have always dreamed what it would be like to be at one of those extravagant dinners. I might even be the guest of honor.

4. I would like to eat a fancy and expensive restaurants all over the world. The ones I only dream of now

5. I would get to meet Sir Paul McCartney! Enough said.

6. Ok, seriously I would like to know what it is like to have enough money to do all those things. I would also like to have enough money to be able to help people that really needed it. We had a few sad events in Michigan the past few days. One a car with 5 young people in it decided to try and outrun a train and didn't make it. All 5 are dead. In another area, a family was camping. The Dad got up early and was cold, his family was sleeping so he went to their car to warm up. He fell asleep and hit the gear, running over the tent. His wife and 1 year old daughter are ok, but the 5 year old son is critical. He is a homeless Irag vet and they were living in the tent. Now they are going to take the children away until he can provide a home for them. Now I wish I had the money I earned from being a rock star to buy that family a home and get that child the best medical care available. I wish I could pay for the funerals of those 5 families and get them the help they needed. It wouldn't change anything but it might give them less to worry about.

I am sorry to end on a sad note, but I can't get these stories off my mind and I thought they could use some extra prayers from the blogasphere.

I didn't take this photo, it is a night shot of Summerfest in Milwaukee. The largest music festival in the world. I thought it had enough navy blue to qualify.

2. Sasha is my third pet, I grew up with a cocker spaniel(Mr. Black) and Holly our other shih tzu, passed away in my arms. She had a heart condition. She was with us for 8 wonderful years.I was devestated.

4 I am very allergic to kiwi, if I even get the juice(I found out the hard way) into a cut on my hand, my throat begins to close up.

5. I have suffered for many years from agoraphobia and panic attacks(under control right now)

6. My favorite food is pizza, everyday, all day, breakfast, lunch or dinner.

7. I am a diet cokaholic. I drink it as soon as I get up and all day after.

Recipe Swap Monday 7/6/09

Anissa at Our Chaotic Life is once again hosting Recipe Swap Monday. Thanks Anissa. I love this dip, I make it often for get togethers. It is simple to make and delicious if you like a reuben sandwich that is. I like to serve it with crackers or cocktail rye bread.

Reuben Dip:

2 cups chopped corned beef

1 cup saurkraut(well drained and chopped)

1-1/2 cups grated swiss cheese(reserve 1/2 cup for top)

1/2 cup thousand island dressing

1 tsp caraway seeds(optional)

1/2 tsp horseradish(optional)

Mix all but 1/2 cup swiss cheese together well and put into a casserole that is sprayed well with non-stick cooking spray.

Bake at 350 for 20 minutes until it is hot and bubbly, add the remaining swiss cheese and bake for 5 more minutes.

Serve hot, I like to use a spoon instead of a knife to get it on to the cracker or bread. I have also taken this mixture and spread it between 2 slices of rye bread and grilled it like a reuben, everything is all chopped up and mixed together so it is easier to eat than a traditional reuben.

I have a special prayer request for my blogging friends. My Mom who is 91 and still lives in her home, fell and is in the hospital. Amazingly she didn't break anything, but she is in a lot of pain. She is in Wisconsin and I am in Michigan. My 2 sisters and a brother live close by to her, but now they have to make the decision whether or not she can go back home and continue to live by herself. Please pray for her and pray that my family makes the right decision. Thanks Anne

p.s. I also have a close friend who fell and broke both of her elbows. She lives alone and is a very busy and independant woman. She is a widow but has 2 sons and friends to help her, but she also needs some prayers.

My husband and I were reminiscing about 4th of July's when we were growing up. I wonder if any of you have the similar memories. The 4th of July was a very exciting time for me as a child. We always spent the day before decorating our bikes at the local high school gluing red, white and blue crepe paper all over in fun patterns for the big parade and contests. I was always afraid to ride it home so I would walk it all the way home so I wouldn't ruin the decorations.

I would wake up early to get my bike over to be in the parade down our main street and then they would judge the decorated bikes for ribbons and bags of candy. The mayor and other officials would sit in the back of convertible cars and throw candy and after our part in the parade which was always first we would run to collect the hard candy.

Next after a quick stop at home, (by this time I would ride my bike because the judging was over) to drop off my bike and treasures we would walk to the park. We lived very near to it in fact just beyond our back yard was a golf course connected to the park. Now the real fun began.

We would line up for free cracker jack, free ice cream with the little wooden spoon and free flags. After that there were contests, my favorite was the penny scramble. I remember waiting in the anxiously as they lay down the saw dust and then buried the pennies and if you were lucky larger coins into it. They would actually shoot off a gun and what seemed like thousands of us which was probably 30 or 40 kids would dash and dive into the sawdust and begin the search for coins. One year I found a quarter and I thought I was the luckiest kid alive. There were water balloon fights and 3 legged races, potato sack races and there were prizes if you won. Nothing major except to the winner.

There were people having picnics and sparklers and fire crackers were everywhere. I headed home with my latest rewards and then we had a barbecue with the neighbors. My Dad always burned the hot dogs and to this day I love a burned hot dog. The potato salad was the best, the watermelon the sweetest and I had not a care in the world. I didn't know how to have any yet. At night with flash lights and blankets and bug spray, we headed through the backyard and up the hill to the golf course where we had a perfect view of the fire works. We would come back home and finish the day with sparklers and popcorn balls. I would fall asleep to the sounds of the last firecrackers off in the distance.

We still have fun 4th of July festivities. Our daughters best friend (we call her our other daughter) was born on July 4th so now every year we go and spend the day with her and her family. We have very good memories from that and my daughter especially loves that her friend has a birthday on the 4th. I guess good memories are found in many different ways. I am so lucky to have good memories growing up and good times to look forward to every year.

French Toast Bake

This is a fun recipe and what I really like about it is that its easy and you can make it and leave it in your refrigerator overnight and bake it the next day.

Start with a 9X13 pan and spray well with non-stick cooking spray.
Cut a loaf of french bread into 1 inch slices and line the bottom of the pan, scrunch them in if you have to.
Mix together well:
8 large eggs
3 cups of milk
1 TBSP of vanilla
4 tsp sugar
1/2 tsp salt

Pour over the bread and make sure that it soaks into all the pieces. Cover tightly and refrigerate for at least 4 or up to 36 hours.

When you are ready to bake:
Uncover and dot with 2 TBSP butter, cut in little pieces
Bake at 350 for 45-60 minutes until bread is puffy and lightly browned. When you take it out sprinkle with a little cinnamon and powdered sugar mixture.

Let it sit for about 5 minutes and then serve. I cut mine into squares and served it with syrup.

Another variation in the liquid mixture I omit the sugar and vanilla and add 1 cup chopped ham and 1 cup grated cheese and then bake as above. This gives it a different taste, my husband loves it this way.

Artichoke Heart Dip

I love this dip, it is a hot dip and I know its summer and you don't want to think of hot food, but give this a try.

Spray a casserole dish well with non-stick cooking spray

Mix together:

1 cup mayonnaise( I use light)

1 cup grated parmesan cheese

2 cups grated mozzarella cheese

8 oz. jar artichoke hearts, drained and chopped

1/4 cup chopped pepperonchini peppers

1 tsp. garlic powder

After mixing together well, put it in the casserole and bake at 350 for 25 minutes until golden and bubbly.

Serve with wheat crackers or spread on cocktail rye bread.

Sending a Package to a Soldier in Afghanistan

We have 2 friends who have been deployed to Afghanistan. Carol is in the army, she is a sgt. who is in charge of setting up camps for other soldiers in the field. Janae is in the air force and I am not sure yet what she will be doing. I am sending care packages and I thought it might be nice to share with you. I have e-mailed Carol and made sure of what I can send and what she likes and needs. Right now she has access to personal items but wants treats(chocolate) and also some lotion. It is very hot there so I cannot send chocolate. Her Mom tried and it didn't work. I did find some tootsie rolls which are chocolaty. I was looking chocolate skittles that were out for a while but couldn't find them. First I went to the post office and got the correct box and label to put on it

I used a local newspaper to line the box. I thought she might enjoy reading it.

This box will cost $10.95 to ship no matter what I put in it, as long as its not bulging.
Above is the form from the post office, they were very helpful in telling me what to fill out.
Above are her favorite candies and I checked and these things should travel ok. I found some jelly belly's that are ice cream flavors , hopefully some will taste like chocolate.
Carol loves animals and has many that she left at home with her husband. I got her Burt's Bees lotions because I know they don't test on animals and she likes that brand. The rest was just for fun and I am going to sprinkle the red and blue stars over the inside of the box. I am also going to put each item in a zip lock bag just in case something does break open in shipment. I know Carol she will reuse the ziplock bags. I haven't heard from Janae yet but she is next.

Saturday Small Talk Six

If I had magical sunglasses name 6 things I would like to see with them.

1. I would like to see inside of someones brain while they are thinking, I bet that would be cool.

2. I would like to see what Sasha(my shih tzu) looks like inside especially when she is running

3. I would like to see where very evil world leaders from certain countries are hiding

4. I would like to see what the traffic will be like before I go out so I can plan my route(no gps yet)

5. I would like to see inside of that darn watermelon before I buy it and all melons as well.

6. I would like to see inside my husbands body to make sure everything else is still working ok, even though his kidneys aren't

I have come accross some wonderful new blogs that are written by young people and I want to share them with you and with each other. I have checked all these blogs and there is nothing objectionable on them just information and fun for other young bloggers. I wish I would have had something like this when I was younger. I was very shy and didn't make friends easily so I would have enjoyed this. I know that we live in a world that isn't always safe but there is also a lot of good in it that we can share. Please if you are a young blogger always check with your parents on rules regarding visiting other blogs.

Here are some very special blogs and if you have any to add, please do in your comments and I will add them to the list.

From Lexi to Ali with Love Ali (girl)is 11 and her blog is beautiful and so is she, I especially love her story about going to a Banana Split Festival. This is something I have dreamed of.

Frozen Margarita

Add the following to a blender:

4 cups ice cubes

1/2 cup Tequila

1/2 cup Cointreau(orange flavored liqueur)

1/4 cup fresh lime juice

Mix all together until nice a smooth, pour into

4 glasses or 2 glasses or 1 big glass and enjoy

Frozen Watermelon Slush

Add the following to a blender:

3 cups seedless watermelon cubed

1 cup strawberries

2 scoops lemon sorbet

1/4 cup pineapple juice

1 TBSP fresh lime juice

1/2 cup Vodka

Blend until nice and smooth and follow above instructions

I love this one because we had a great summer vacation when I was growing up. I am the youngest of seven and we didn't do a lot of travelling when I was younger. I am certain this had to do with having a large family and saving money. Each summer in August, we went up to northern Wisconsin to a place called "Idle Hour Resort". It was in Lac de Flam beau. We would rent a cottage for 2 weeks. We got friendly with the owners and the other families so that eventually the same families came up every year. I always had friends to look forward to.

The cottage was old and had that cedar smell when you walked in, no air conditioning of course. It was off of a beautiful lake that we would go swim, water ski and fish in. The lodge had deer heads and antlers everywhere and a stuffed bear that was alive at one time, I never really liked that part but I did like the ice cold soda they had in the cooler in glass bottles, all flavors, black cherry, root beer, orange, lime. It was so cold and good, I can still taste it. Once a day I was allowed to go for ice cream, the owner whose name was Chuck would go to the back and scoop out of big tubs of ice cream. Butter pecan was my favorite, I don't think any ice cream ever tasted so good even now. There were activities every day such as "weeny roasts", " outdoor movies", " pot luck dinners". It was hot and buggy and it was the first time I got stung by a wasp, but I don't remember caring. My family was there all having fun, I had friends, a playground, the lake, at that time I couldn't imagine being anywhere else. I never even thought about going to Europe or California, I wanted to go up north every summer. We would take trips to the nearby towns and always I would get some cool treasure to take home. They had candy that looked like rocks, I loved those.

The ride up there could be tight since there were so many of us, but my Mom would have a special treat box and every 100 miles we were allowed to choose a treat. I had books and mostly I think I just slept. The ride home was always a little sad for me, the vacation was over. Which also meant summer was almost over and soon school would start, but for that 2 weeks every summer none of that mattered.

Breakfast Puffs for Recipe Swap Monday

I love this recipe, these are melt in your mouth sort of muffins, rolled in cinnamon sugar.

Spray 24 mini-muffin tin with non-stick cooking spray and set aside. Heat oven to 350.

Sift together the following ingredients:

1-1/2 cups flour

1-1/2 tsp. baking powder

1/4 tsp. salt

1/4 tsp. nutmeg

1/4 tsp. cinnamon

Set this aside and in with a mixer cream together:

1/3 cup butter

1/2 cup sugar

1 egg

Mix well and then add the flour mixture alternating with 1/2 cup milk beating well. Fill each muffin cup 2/3 full and bake at 350 for 10-15 minutes until golden brown and they bounce bake when you push on them.

While they are baking mix together 1 cup sugar and 2 tsp. cinnamon. Melt 1/2 cup butter.

When muffins are done, turn pan over on a flat surface and while warm, dip each into the butter and then the sugar/cinnamon mixture. Serve warm if you like or they are delicious cool also. If they don't all get devoured as mine usually do, put them in a tight container overnight.

Hints: My husband is a diabetic so I use Splenda instead of sugar which does cut back the calories. I have also just dipped them plain (omitting the butter dip)while still warm into powdered sugar. One other thing I tried was making a glaze with powdered sugar and dipping them into the glaze while warm. All were enjoyed by us. I hope you like them as well.

A Word to the Wise

This one almost makes me laugh. If you follow my blogs, you know that I began in an effort to make some income off of Adsense while I was blogging. Well about 3 weeks into my journey, Adsense dropped me and gave me no reason and kept the income I had earned. I was sad, but I moved on and discovered the love of blogging. What initially brought me to Adsense was a program that my husband found for me. My Internet Payday by Joel Comm. I started the program because after all it only cost $1.00, yes just 1 thin dollar to do it so what could I lose?

Ok here is where it starts to hurt. I did follow the program, but honestly it didn't pertain to me for the most part, so I learned what I needed to learn just from fellow bloggers and from another group I belong to called Hubpages. I forgot all about My Internet Payday and moved on, until last night when I went to check a suspicious withdrawal on our bank account. Guess what I didn't read the teeny tiny fine print that said: If you don't cancel the program within 7 days, you will be charged $78.64 each month until you do cancel. The only way to cancel is to call them. I am doing that, but I doubt I will ever get my money back. So here is the irony, not only did I not make any money with Adsense but now I lost almost eighty bucks because I was so naive. I feel so stupid and sad and angry all at the same time. So please my friends learn from my mistake. Nothing is ever as it seems. I know that what Joel Comm does is probably legal, but I don't think it is ethical. I think that he assumes that many people are not going to bother to read the fine print and only see the part that says you will have a paycheck in 48 hours. Ok I am done, thanks for reading and beware of get rich quick schemes.

RECIPE SWAP MONDAY

HERSHEY PIE

CRUST: 1-1/2 CUPS GRAHAM CRACKER CRUMBS, 3 TBSP SUGAR, 1/3 CUP MELTED BUTTER. MIX TOGETHER WELL AND PRESS INTO A 9 INCH PIE PAN. BAKE AT 350 FOR 10 MINUTES. OF COURSE YOU CAN JUST BUY A GRAHAM CRACKER CRUST, IT WORKS JUST AS WELL.

FILLING: YOU CAN USE A DOUBLE BOILER, BUT IF YOU DON'T HAVE ONE PUT THE FOLLOWING INTO A 2 QUART POT. 1-1/2 CUPS MINIATURE MARSHMALLOW, 1/2 CUP MILK, 7 HERSHEY BARS(1-3/8 OZ) HEAT UNTIL ALL ARE MELTED, STIRRING CONSTANTLY SO THAT IT DOESN'T BURN OR STICK. BLEND IT TOGETHER WELL AND REFRIGERATE UNTIL THICK (ABOUT 1 HOUR) AFTER IT IS THICKENED WHIP 1 CUP WHIPPING CREAM AND FOLD THE CHILLED MIXTURE INTO IT.

POUR MIXTURE INTO PIE SHELL AND REFRIGERATE AT LEAST A COUPLE OF HOURS BEFORE SERVING. IT IS GOOD WITH A LITTLE COOL WHIP OR WHIPPING CREAM ON TOP.

IT IS DELICIOUS AND EASY TO MAKE, ESPECIALLY IF YOU BUY THE CRUST. I MAKE A SIMILAR VERSION FOR MY HUSBAND WHO IS DIABETIC. I MAKE THE CRUST USING SPLENDA INSTEAD OF SUGAR, I USE NON-DAIRY CREAMER INSTEAD OF MILK , I USE DARK CHOCOLATE INSTEAD OF MILK (AS IT CONTAINS LESS SUGAR). IT STILL WORKS NOT QUITE AS THICK BUT GOOD.

LISTERINE MOUTH WASH A MOSQUITO REPELLANT??

MY HUSBAND SENT ME ANOTHER INTERESTING EMAIL THAT I AM PASSING ON TO YOU. I HATE THE SMELL OF LISTERINE, BUT I HATE THE SMELL OF BUG SPRAY MORE. I THINK IT IS WORTH A TRY.

Mosquito Spray...Worth a try
I was at a deck party awhile back, and the bugs were having a ball biting everyone. A man at the party sprayed the lawn and deck floor with Listerine, and the little demons disappeared. The next year I filled a 4 -ounce spray bottle and used it around my seat whenever I saw mosquitoes. And voila! That worked as well. It worked at a picnic where we sprayed the area around the food table, the children's swing area, and the standing water nearby. During the summer, I don't leave home without it.....Pass it on.

Comments: Unfortunately there are no scientific studies to confirm or disprove these anecdotal claims, though laboratory tests have shown that standard chemical-based mosquito repellents are generally more effective and longer-lasting than botanical-based alternatives (and Listerine Antiseptic mouthwash would have to be counted among the latter).
The primary active ingredient in Listerine is eucalyptol, a derivative of eucalyptus oil, which in turn is commonly used in botanical repellents. According to various clinical studies it actually does repel mosquitoes. However, the eucalyptus-based compounds tested in these studies contained much higher concentrations of the essential oil than that found in Listerine Antiseptic — 40% to 75% concentrations as opposed to Listerine's .092% — and were applied topically, not simply sprayed in the air or on surrounding objects. Given Listerine's extremely low eucalyptol content, it's doubtful the product would function very effectively as a repellent — not for long, at any rate — even if applied directly to the skin.
The claim that Listerine sprayed around door and window frames actually killed mosquitoes is even more dubious. Listerine consists mostly of water and alcohol, which means it would evaporate quickly whenever and wherever it is sprayed. I have no doubt that drenching mosquitoes with the stuff would kill a significant number of them, but there is little reason to suppose that spraying it on hard surfaces would have any lingering effect

COCONUT COOKIE NESTS

I always make these for Easter and my family loves them, but they are so easy to make, I think they would be good for any time of the year. It sort of tastes like a Mounds candy bar.

Start with 2 egg whites, whisk them until frothy and add 2 cups coconut, 1/3 cup sugar, 2 TBSP flour, 1/2 tsp vanilla, 1/8 tsp salt and mix together well.

Now for some fun, you can divide the mixture and put food color in to make a few different colors or just leave them plain, its up to you. Green is fun, but I usually make them different pastel shades for Easter.

Lightly grease a baking sheet, if you have parchment paper I really recommend it for these. Drop by tablespoons into mounds, you can control the size of the cookie, here but after you drop the cookie, form a little well in the center for the treat you are going to add after it comes out of the oven. This recipe only makes about 12 - 15 cookies, depending on how big you make them.

Bake at 325 for about 20 minutes until they are just slightly golden browned. As soon as you take them out of the oven, add a chocolate kiss or a few chocolate chips or chocolate covered raisins or use your imagination to the well in the cookie so that it looks like a nest. The treat will melt slightly but keep its shape. Transfer to a cooling rack and let them sit until the chocolate is set again.

These need to be stored in a container with a tight lid, they do dry out pretty quickly. Better yet just eat them and then you don't have to worry about storage. I like these also because I can adapt them for my diabetic husband just by changing the sugar to a sugar substitute and they taste just as good to us.

DALMATIAN CAKE

You will need a 9x13 pan, well greased and bake at 350

1 package white cake mix

1-1/2 cup quick oatmeal

1 cup water

2/3 cup milk

4 large egg whites(lightly beaten)

3 TBSP oil

1 tsp vanilla

1 tsp almond extract

1 cup semi sweet mini chocolate chips

MIX ALL TOGETHER EXCEPT CHIPS, BEAT FOR 2 OR 3 MINUTES AND THEN GENTLY FOLD IN THE CHIPS. SPREAD INTO THE 9X13 PAN AND BAKE AT 350 FOR 35-40 MINUTES UNTIL TOOTHPICK COMES OUT CLEAN . COOL COMPLETELY

FROSTING

I must confess sometimes I just spread cool whip over the top, it tastes great but if you want to frost it, here goes.

Combine 1 cup powdered sugar, 1/2 cup butter, 1/2 tsp vanilla and 1/3 cup marshmallow cream. Mix until nice and smooth.

Frost the cake and I like to sprinkle 1/2 cup mini chips on top and sometimes I add 1 cup coconut.

It is delicious, I hope you enjoy it! I made the one above for a friend of my husbands and decorated it for a retirement. Everyone loved the cake.

7(or 8 ) LAYER TACO SALAD

I love 7 layer salad but especially this time of year, it is so easy to make. I make a taco salad version, which my family loves. You will need a large bowl, if you have a clear bowl, it looks especially nice.

Layer in order:

6 cups chopped lettuce

1 cup chopped tomatoes

1 cup chopped green onions

1 cup chopped avocado

1 cup cubed cooked chicken

1 cup salsa

In a separate bowl mix together, 1 cup sour cream and 1/2 cup mayonnaise, add 2 tsp. chili powder, 1 tsp. ground cumin, if you like it more spicy a couple drops of red pepper sauce. Mix it together and spread over the top of the layered salad carefully and all the way to the edges. Next spread 1 cup shredded cheddar cheese and 1/2 sliced black olives. Refrigerate for a couple of hours and serve.

This is great with some bread and summer fruits for supper.

Yes I know it is technically more that 7 layers but who cares when it tastes so good and is so easy to make. You can make this early in the day and have supper all ready.

BROWNIES

We live in Michigan and my husband is a huge Red Wings fan so it will be hockey on tv tonight for us. To celebrate I made some yummy brownies. They are from a mix but you can dress them up.

I use Betty Crocker Low Fat Brownie Mix and follow the directions on the box.

After they are baked I have some fun, today I put 1 cup of mini marshmallows on top and 1 cup semi-sweet chocolate chips. I do this as soon as the brownies come out of the oven. Let them sit on top for about 30 minutes so they get nice and melty. Then I carefully smooth it all out with the back of a spoon, do this slowly and carefully as the brownies will come up other wise.It has a lumpy bumpy look. I also threw on some red sprinkles that I had for the Red Wings. When they cool carefully cut them and serve. I get a butter knife and put it in a cup of hot water and use that to cut, it seems to cause less tearing and they come out nice. I know the chips add a little more fat so that is why I use the low fat mix and the brownies taste great.

Have fun with it, now go and make some brownies for dessert!

We have lived in our home for almost 19 years and have had many neighbors over the years. For the most part we have been very lucky. But now we are extremely lucky I think. I have an injured knee that I am nursing and my husband being on dialysis, gets tired very easily(what a pair lol). Our next door neighbor has been (unfortunately )layed off from his job , but in his kindness has been cutting our lawn for the past several weeks. We never asked him to do it, we do go out and give him refreshments and all he says is "I am so bored at home, just looking for something to do". How nice is that, I ask you? It is one less thing for me to worry about. I have been thinking of something nice to do for him and his family, who are always there when we need anything done. I decided this weekend I am going to make them a homemade pizza( which is one of my specialities), I am going to make a basic cheese pizza and give them all the toppings separate so they can put on what they want. Along with it I am going to make a cherry cobbler and I was thinking of a salad. They are the kind of people that do things without expecting or wanting anything for it, so I am hoping this is something homemade from my heart. I feel like if I bought them a gift, it wouldn't have the same feeling. What do you think? Is a gift from the heart good for the soul?

ITS RAINING, TIME TO BAKE SOME COOKIES!

THUMBPRINT COOKIES

1/2 cup butter(or margarine)

1/4 cup brown sugar

1 egg

1/2 tsp. vanilla

1 cup flour

1/4 tsp. salt

3/4 cup finely chopped pecans(optional)

Mix ingredients together well and roll into balls. If the dough seems sticky you can refrigerate for about an hour and then roll into balls. The next is optional, I have a daughter with nut allergies so I only do this if I am giving them as a gift to someone. When I make them for us, I either leave them plain or roll in colored sprinkles . Take each ball and roll it in the chopped nuts and then place about and inch apart on ungreased baking sheet. Gently make a thumbprint in the center. I use the end of a wooden spoon to make the thumbprint. Bake at 350 for about 10 minutes until they are nice and golden brown. After they cool you can fill them with your favorite jam or jelly. For my husband I use a sugar-free jelly. At Easter I put a chocolate egg in them as soon as they came out of the oven. You can also put a little frosting in the thumbprint. They taste good with all but the jam tastes the best in my opinion. Sometimes if I want to get fancy I make a thin icing and "spatter" them with it after the thumbprint is filled.

I hope you enjoy them, its fun to bake, it can bring everyone together. I have some great memories of baking with my sisters growing up. Now I bake with my daughter. Nothing brings everyone around like the smell of cookies baking.

A GIFT FROM MY DAUGHTER

My daughter and I took a trip to Shipshewana, Indiana last year. We had such a nice time and talk about comfort food. They have every pie known to man, pies I have never even heard of and some I have heard of but never tried. Our favorite was the fresh raspberry , and fresh peach, too good! I tried shoo fly pie and have to admit I didn't care for it, a little too sweet for me. They had bakery the size of footballs and the chicken dinner was unbelievable. We live in Michigan so we do go up to Frankenmuth where they also have wonderful chicken dinners but this was just as good. The shops are so much fun and the atmosphere is very pleasant, not rushed, peaceful. I recommend going there to you all. My daughter and I were also huge fans(until the last season which I won't talk about) of The Gilmore Girls. In Shipshewana there was an area that reminded us both of Star's Hollow, we spent a lot of time there relaxing. Last Christmas my daughter made this picture for me, I was overwhelmed. It is just like the area we called"Stars Hollow". I am a lucky and very proud Mom.

POTATO SALAD

The holiday weekend is almost here! I can smell the cookouts already. Burgers, hot dogs, brats maybe even steaks. What goes best with anything a fresh homemade potato salad. It takes a little time but it is so worth it. I can't stand the store bought potato salad, they always have that after taste. If you make your own you won't have that problem, the only problem you will have is making enough. This is the recipe my Mom made and I have never changed it. It is very basic nothing fancy but and trust me on this one it is good.

Serves 4 (you can double, triple and on and on)

6 large red skinned potatoes (if they are the real small ones than 12 small), cooked until still slightly firm, not too soft about 30 minutes but keep checking them every 15 minutes, you don't want them to be mushy at all. They should still have a little firmness when you poke them with a fork. I like to cook them and when they feel slightly firm I turn off the heat and just let them sit in the hot water for 5 or 10 minutes until they feel just right. Cool and then peel and slice or cube them. I don't know why but my Mom hated them cubed, we had to slice them when we made it with her lol.

1/2 cup finely chopped onion

1/2 cup finely chopped celery

6 hard boiled eggs peeled and chopped

1 cup mayonnaise( it can be low-fat whatever brand you like)

salt and pepper to taste

I use a large bowl for mixing and starting with the potatoes I layer 1/3 and then some celery, onion, eggs and mayo and a little salt and pepper and continue layering until everything is used up. I do this so that now when I go to mix it all together, it doesn't get so broken up, I like to mix it gently so that it looks nice when you are done. I reserve 1 hard boiled egg and slice or grate it over the top. Now taste it and decide if it needs a little more salt or pepper. I tend to hold back so that my guests can add their own if they need to. Next cover tightly and refrigerate for several hours or overnight. Enjoy and Happy Memorial Day to all!

YUMMY FROZEN DESSERT THING

I had this at a friends house and it was so good and as I found out so easy to make.

You will need a 9x13 pan, 24 ice cream sandwiches(any kind), 1 large tub cool whip, ice cream toppings, nuts, chocolate syrup, sprinkles, cherries, etc.

Layer 12 ice cream sandwiches in the bottom of the pan, cut them if you need to so they fit snuggly. Spread a layer of cool whip over that and then another layer of sandwiches followed by another layer of cool whip. Cover with foil tightly and freeze for several hours or overnight.

To serve: Take it out of the freezer and let it sit out for 5 minutes to soften, then add the toppings. You can go nuts here. I like to put chocolate syrup all over and then sprinkles followed by cherries with the stems so that everyone gets a cherry when you cut it. You just cut into squares and enjoy.

There are so many different kinds of ice cream sandwiches that you can have fun with. There are also low fat sandwiches making this a nice low fat dessert.
