Recipe Swap Monday 7/6/09


Anissa at Our Chaotic Life is once again hosting Recipe Swap Monday. Thanks Anissa. I love this dip, I make it often for get togethers. It is simple to make and delicious if you like a reuben sandwich that is. I like to serve it with crackers or cocktail rye bread.
Reuben Dip:
2 cups chopped corned beef
1 cup saurkraut(well drained and chopped)
1-1/2 cups grated swiss cheese(reserve 1/2 cup for top)
1/2 cup thousand island dressing
1 tsp caraway seeds(optional)
1/2 tsp horseradish(optional)
Mix all but 1/2 cup swiss cheese together well and put into a casserole that is sprayed well with non-stick cooking spray.
Bake at 350 for 20 minutes until it is hot and bubbly, add the remaining swiss cheese and bake for 5 more minutes.
Serve hot, I like to use a spoon instead of a knife to get it on to the cracker or bread. I have also taken this mixture and spread it between 2 slices of rye bread and grilled it like a reuben, everything is all chopped up and mixed together so it is easier to eat than a traditional reuben.

Last Saturday

It is a very rainy stormy Saturday afternoon. My husband is crabby because the power keeps going on and off and he can't watch sports, which is his other love. My daughter is in a bad mood because she wants to go for a walk and its storming out. Our dog is howling because of the storm and running around crying looking for a place to hide. Am I upset? No. Why you ask? I am enjoying the most delicious melty gooey grilled cheese sandwich in the world. I am blocking all of them out and am at one with my sandwich. What is it about grilled cheese that is so comforting and so satisfying. The house could blow away and as long as my sandwich is with me I am fine for that few minutes until it is a warm memory. I look forward to my next bad day so I can again enjoy that few minutes of nirvana. Enough said?
