I am going to focus on my high school years, aka "The worst four years of my life"

1. I loved my little group of friends
2. I hated taking 2 buses to get to the school
3. I hated studying of any kind.
4. I hated the pressure to get good grades
5. I HATED my gym teacher(my Mom went to the same school, she was 40 when I was born and I had the same gym teacher she did(honestly). She was so old and mean, I used to feel sick the night before and try to think of ways to get out of it.)
6 I loved graduating and I loved college


This isn't "Coach Burdick" but it is close enough. This is how I remember her anyway lol.

Grilled Potatoes Greek Style

This is a great recipe to go with the Pork Souvlaki recipe I recently posted. I know that there are many versions of grilled potato packets for the grill. My daughter and I love greek food and love feta cheese. If you do also, please give this a try.

Serves 4
~~~~~~~~~~~~~~~~~~~
8 or 10 small red skinned potatoes, washed and cut into thick slices, leaving the skin on
1 small onion, sliced thin
3 TBSP olive oil
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried oregano
1 cup crumbled feta cheese

Mix together all the ingredients and set aside. Take a large piece of foil and put the mixture right down the middle. Carefully seal all sides and then I take another sheet of foil and wrap it again, so that nothing leaks out to flare up the grill. You can place the packet on the grates or right into a campfire or charcoal grill. It takes about 30-45 minutes, you can, with an oven mitt on, pinch the potato and tell if it is soft. Be sure to turn the packet over about every 10 minutes while its cooking so that it cooks evenly. It is very hot and steamed when you open it, be careful.

True Colours Thursday

Please visit True Colours Thursday at http://poopsiestruecolours.blogspot.com/ . This weeks color is Pale Pink. I made this cake a little while back, trying to make it look like a watermelon, the cake is a sort of pale pink. I love this flower, I think it works for this week.
Sasha wanted to help out, but she refused to keep the new princess hat on her head, this is how she would rather wear it.

Grilled Pork Souvlaki


My kitchen is torn up right now and it is a mess. Everything is in boxes as we are getting some needed repairs done. I am so excited for a new kitchen and will be so glad when it is all done. We have been eating out a lot. It is really hot here, but I wanted to try grilling despite the heat. I don't have any photos, sorry, my camera is somewhere in the mess and my daughter is away this weekend with hers(the above photo I found on the web, cheating, sorry). I hope you enjoy the recipe.

Grilled Pork Souvlaki

1/4 cup olive oil
3 tablespoons lemon juice
1 large clove garlic, minced
1/2 teaspoon salt
1 teaspoon dried whole oregano
1/8 teaspoon black pepper
1 pound pork tenderloin or pork loin chops, cut in 2” cubes for grilling
1 large green pepper, cut into 2” cubes( I like to use the yellow ones also)
1 medium onion, cut into 2” cubes

Combine, oil, lemon juice, garlic, oregano, pepper, salt together in a zip lock bag. Put the pork in the bag and seal, give it a shake and refrigerate for an hour. Using skewers, alternate peppers, onion and pork leaving room at each end of the skewer so the food doesn't slip off into the grill.

Grill for 10-15 minutes on medium heat, turning often and using the marinade in the bag brush them often while cooking.

This is easy and delicious, served with a nice fresh salad and fruit.

1. I love to spend an evening with my family, reclining , big bowl of popcorn, watching a movie.
2. Long car rides are very relaxing to me. Sometimes I fall asleep.
3. Baking is something I love and I find it very calming.
4. I would like to spend a weekend at a very expensive hotel, hot tub in the room, room service, sleep until noon.
5. Nice fall day, out on the deck, comfy chair, reading a good book.
6. Hot bubble bath.

These are taken on a recent trip with my daughter to Shipshewana, Indiana. There are many Amish people living in the area. The sights are beautiful. There is wonderful shopping and a chicken dinner that you will never forget. It is a nice place to visit, especially for handmade items, such as furniture, bakery and much more.

Here goes: Honestly I can't think of that many, I guess I am not as weird as I thought I was.

1. I can roll my tongue

2. I can wiggle my ears

3. I can make the vulcan peace sign thing from Star Trek, but only with my left hand.

4. I am really good at giving my husband "The Look"

5. I have 4 ear piercings(2 on each ear) and I did them all myself, when I was young and silly, but they are still there.

6. I can pick up many different things with my toes.

They all sound pretty boring, but thats me. How about you?
