I love 7 layer salad but especially this time of year, it is so easy to make. I make a taco salad version, which my family loves. You will need a large bowl, if you have a clear bowl, it looks especially nice.

Layer in order:

6 cups chopped lettuce

1 cup chopped tomatoes

1 cup chopped green onions

1 cup chopped avocado

1 cup cubed cooked chicken

1 cup salsa

In a separate bowl mix together, 1 cup sour cream and 1/2 cup mayonnaise, add 2 tsp. chili powder, 1 tsp. ground cumin, if you like it more spicy a couple drops of red pepper sauce. Mix it together and spread over the top of the layered salad carefully and all the way to the edges. Next spread 1 cup shredded cheddar cheese and 1/2 sliced black olives. Refrigerate for a couple of hours and serve.

This is great with some bread and summer fruits for supper.
Yes I know it is technically more that 7 layers but who cares when it tastes so good and is so easy to make. You can make this early in the day and have supper all ready.

This is one of our favorites too!

It's starting to get hot here now so that would be really good. Anything that doesn't require a lot of cooking in the summer is very good.

Have a great weekend,

oh, I absolutely LOVE this salad! MY aunt use to make this for us when we were kids and it was a dinnertime favourite for sure!

Thanks so much for stopping by my blog to say hello :)

And, to answer your question about letting your hubby out of the box .. I suppose with the right negotiations it would be ok lol .. ;)

take care!

I have never had a 7-layer taco salad before. It sounds wonderful and it is going right into my "to try" folder. Thanks for sharing!
