Anissa at Our Chaotic Life is once again hosting Recipe Swap Monday. Thanks Anissa. I love this dip, I make it often for get togethers. It is simple to make and delicious if you like a reuben sandwich that is. I like to serve it with crackers or cocktail rye bread.
Reuben Dip:
2 cups chopped corned beef
1 cup saurkraut(well drained and chopped)
1-1/2 cups grated swiss cheese(reserve 1/2 cup for top)
1/2 cup thousand island dressing
1 tsp caraway seeds(optional)
1/2 tsp horseradish(optional)
Mix all but 1/2 cup swiss cheese together well and put into a casserole that is sprayed well with non-stick cooking spray.
Bake at 350 for 20 minutes until it is hot and bubbly, add the remaining swiss cheese and bake for 5 more minutes.
Serve hot, I like to use a spoon instead of a knife to get it on to the cracker or bread. I have also taken this mixture and spread it between 2 slices of rye bread and grilled it like a reuben, everything is all chopped up and mixed together so it is easier to eat than a traditional reuben.

I have never had anything like that before. I love corned beef though. I am intrigued. We usually only have corned beef once a year on St. Patrick's Day - this will give me an excuse to have it another time and use the leftovers for this.
I am reading these recipes to hubby sitting in the next room. "Sounds pretty good"-that's a definite thumbs up, this one will be used! WE LOVE ruebens and I wanted to post my rueben casserole earlier but I do it out of my head.
