RECIPE SWAP MONDAY

http://learningtogetherhandinhand.blogspot.com/
Sunburst Stir -Fry

1 20 oz. can chunk pineapple, drained(save the juice)

4 small boneless chicken breast, sliced into thin strips

3 carrots sliced

1 green pepper sliced

3 green onions, sliced

2 cloves garlic, minced

1 tsp. ground ginger

3 TBSP oil(divided)

4 oz thin spaghetti, cooked

1 TBSP corn starch

Sauce:

Mix together pineapple juice, 1 TBSP oil, 1 TBSP corn starch and set aside

Stir fry the chicken in 2 TBSP hot oil, ginger and garlic. Cook for 3 minutes. Add pineapple, carrots, green pepper and onions. Cover and steam for 3 minutes. Stir in spaghetti and sauce, turn up to high and stir constantly until the sauce thickens. Serve hot and enjoy.

Quick and yummy. I like to prepare the meat and vegetable the night before and then it is so simple to just throw it all together.

Sounds yummy, but where's the picture? Forget the picture. What time's dinner?

I love to add something to spaghetti like you do. I'll try your recipe if you don't mind. I can tell right now that this tastes delicious!

You should try this recipe with a 1/4 cup or so of brown sugar. Would compliment the bell peppers, pineapples, and ginger very nicely.

You could also try the recipe with Splenda for the same sweet effect, however it wont carmelize like the brown sugar will. Try it with the brown sugar first and then use Splenda to see the difference. If y'all like spice, you can also add just a dash of red pepper. You can also try this recipe (sans spaghetti noodles) over brown rice which is less processed than white rice and supposed to be better for diabetics. If you try it, let me know what you think.

Great recipe. Am I supposed to share one since you said "swap"? I posted one a couple days ago, though it's mighty simple compared to yours, nothing fancy.
